Di Mare is a Mediterranean style fine dining eatery whose cuisine features intriguing pan pacific twists. The restaurant is numbered amongst Bali’s finest, revered for its architectural audacity, location and of course gourmet offerings. Set on a rocky outcrop 85 metres above the Indian Ocean surf, it’s a thoroughly contemporary venue, a pavilion with a sail-like roof of white, tensile fabric and elliptical contours that make one think of an ocean going vessel. Signature dishes include Sea Bream with Bronze Fennel & French Tarragon Dressing, Black Linguine with Freshwater Clams and a high grade Wagyu in a Calabrese Red Wine Sauce.
There’s a strong emphasis on seafood and the overall approach is to create light dishes celebrating seasonal ingredients in keeping with the tropical surrounds. Meat lovers will not be short on inspiration however – whether in the shape of a prime, high-grade Spiced Lamb Rack offering, or a lunchtime burger. di Mare is committed to providing top quality wines, from old world classics to new world wonders. The wine cellar is managed by Karma’s very own sommelier and there’s even a revolutionary Enomatic wine dispenser in Veritas Wine Lounge beside the restaurant. Wine dinners and tastings are a regular feature. Little wonder that esteemed publication Tatler listed di Mare amongst its top restaurants in Indonesia.
